    Hi all, 

    So, today's question comes from a tired mom (me!) who REALLY wants to feed her family healthy meals. I don't have a lot of time to prepare meals so I usually try to create a dinner monthly menu and lay the meat out to thaw the day before. I'm still really stuck in a rut with healthy options. 

    So....What's your favorite heart healthy meal? Share your tips and ideas on eating healthy. 

    Bonus for sharing tips on how to drink more water (I struggle with that)

    We are heavy instant pot users here, it's become a lifesaver during the week.  If you haven't heard of it, it's a combination pressure cooker/slow cooker (best deal is usually a flash deal or black Friday deal on Amazon).  With it we are able to make stews and soups in a short amount of time, I usually stick my veggies in during the last five minutes - there are loads of great heart healthy recipes on Pinterest.  I also make bulk sweet potatoes or sometimes hard boiled eggs in it.

    Very interested in seeing how others get water in also - I struggle with this!

    The way I get my 8 cups of water in each day is to fill a 1/2 gallon pitcher with water and pour from that all day.  When the pitcher is empty I know I have had my 8 cups!  Easier than trying to keep track....which my senior brain cannot handle!

    KEEP A GLASS OF ICE  WATER NEARBY.  MANE AN REAL EFFORT TO KEEP SIPPING. ICE WATER IS COOL AND REFRSHING.  NEVER ORDER SODAS OUT OR HAVE THEM IN THE HOUSE.  ICE WATER OF ICE TEA WILL KEEP YOU QUENCHED.

    I've heard of the instant pot but haven't tried it yet. I hear it is a GREAT way to get dinner done on the weeknights. I may have to explore it. 

    We don't do soda in the house, so that's a start. I like the idea of keeping it close by all the time. I have friends who use a certain cup that they know how many of them they should drink a day. I need to start doing that.

    Favorite meal: Salmon cooked on a grill along with a vegetable in season, with my favorite being asparagus, and a green salad with a home made simple dressing lightly applied, served with a glass of water and, for adults, a glass of white wine. 

    A nice addition, or substitution, is a sweet potato, as my deceased step father, when he was the US representative to the United Nations where he traveled the world trying to help people learn to feed themselves and eat healthier, who said that the sweet potato was the perfect food in that we could eat them exclusively and live: it was the only food in that category. I recommend substituting sweet potato fries whenever possible, and if a dressing is desired, use mustard rather than ketchup based on the sugar content of ketchup.

    I also like fish on the grill.  I use grill mats and cook white fish from along with lots of fresh veggies on the grill
     - we are in southern Texas at our Winter Texan home and have lots of fresh veggies to pick from.

    Simply this is the best meal for us as well.  Of course the glass of wine is a necessity.

    Ok: Easy to make: Salmon with asparagus and one more veggie of your choice. Cook the asparagus and other veggie with the salmon. Have twice a week.

    Roasted veggies with fish or chicken, baked or grilled are a great meal for me. My Dr. does not want me eating red meat. Nothing seems quick for me.

    We do a lot of chicken and white fish... My daughter is loving shredded chicken with verde sauce :) we've done enchiladas and over rice. Our son is a tougher critic, but he's working on some food aversions. He requested noodles so i've found the Barillo protein plus and he loves it. My go to meals are usually crock pot recipes or big sunday family dinners with plenty of leftovers ;) 

    We love snacks that include fruits and veggies. So lucky there, my kids are into grapes right now and blueberries for their afternoon snacks. We will do breakfast for dinner some nights too, nothing like some good french toast at night. 

    So hard to be creative, especially after a long day. I joined a group on Facebook too where we can swap recipes. I do some searching on the  weekends if i have a spare moment and see if it's something we will like plus give us some left overs. I do appreciate our grocery store for the preseasoned selections too, the summer time they have kabobs! Yummy! 

    As for the H2O intake, i am right there with you. I've done sliced lemons and limes or frozen fruit in my water, seemed to change it up for a while, but slip back to not drinking enough. I like my water ice cold too, anything less than that, i can't do it. I found a metal thermos type carrier with a good spout and that's helped me too. I also add a drop or two of Lemon or grapefruit Essential oil in it, that'll last a few fill ups. =)

    I am a huge fan of parchment one step meals. You can find a lot of decent quick recipes on Tasty. (Some healthy, many not..LOL )

    As for water, I cannot drink it cold. It doesn't settle well on my stomach. I usually drink a cup of warm water with lemon in the morning to give my digestion a boost and then tepid with a splash of lemon or slices of orange  or cucumber and mint during the day. Infused waters are fun.

    I subscribe to the Mayo Clinic "Housecall" email newsletter, mainly for the health articles, but they also include healthy recipes, see below for the March 16 recipes.  I don't know how easy they are but it's worth a shot.  You can subscribe at www.mayoclinic.org.
